This is a very easy mixed fruit cobbler recipe and it is juicy from the ripe peaches and strawberries that we use. You may also uze frozen strawberries but it is a good idea to thaw them first and remove any excess water content before using to make this cobbler.

The combination of peaches and strawberries is just great and perfect for summer as they are easily available and abundant during the summer season.

Cobbler is basically a delicious dessert made using ripe fruits.

The fruit mixture is usually spread inside the baking pan which is topped with a biscuit style crust topping or cake like topping.

Sometimes the batter for the cake like crust is poured in the pan and then the fruit mixture is spooned over the batter.

Strawberry and peach cobbler is made using a mix of ripe and juicy peaches and strawberries.

You may change the ratio of peaches and strawberries based on what you have got or based on your preference.

Do you need to add cornstarch in cobbler?

It is a good idea to add a little cornstarch (about two teaspoons) to the fruit mixture and mix in evenly to help with easy baking and for better texture.

I often do not add the cornstarch and the cobblers turn out just fine. I also like it that way because I like a juicy fruit mixture.

However, if you fruits are too juicy and if you do not want the cobbler to have a too juicy spread (because it may turn soggy if its too juicy), you may add the cornstarch to the fruits.

How to make strawerry peach cobbler with self rising flour?

In this strawberry peach cobbler, we use bleached self rising flour.

Instead of a biscuit style crust, we have used a soft cake like topping which goes perfect with the juicy peaches and strawberries.

We first bake the cobbler at 375 degree until the crust is baked to golden brown in color, then cover the cobbler with foil and bake at 350 degree for the rest of the time until the inside of the cobbler is cooked too!

This helps with reducing the baking time too, while you can enjoy the delicious and juicy cobbler with buttery cake like crust.

We use the following ingredients to make easy strawberry peach cobbler from scratch at home.

Ingredients to make strawberry peach cobbler

for the filling:

ripe peaches 3 medium sized

strawberries 2 cups

sugar ½ cup

for the batter:

self rising flour 1 ¼ cup

cinnamon powder 1 teaspoon

whole milk ¾ cup

sugar 1 cup

butter ½ cup melted

vanilla extract 1 teaspoon

Step By Step Instructions

To prepare the fruit filling for cobbler:

Wash the peaches very well, peel and pit the peaches and slice in medium sized long slices.

Also wash the strawberries, slice the strawberries in halves (remove any green leaves if present).

Place the sliced strawberries and peaches in a bowl, add the ½ cup of sugar for filling, mix the sugar very well with the fruits.

Keep this prepared fruit filling aside (you may refrigerate this until the batter is also made so the fruits will remain fresh).

To make the batter:

In a large bowl, mix together the dry ingredients – self rising flour and cinnamon powder until they wre evenly mixed.

In another bowl, mix together the melted butter and sugar until they are well combined.

Also add the milk and vanilla extract to the butter sugar mixture, mix very well to form the wet ingredients mixture.

Transfer the wet ingredients mixture to the dry flour mixture, mix together to form the batter. You can use a balloon whisk to mix the batter without any lumps.

To make the cobbler:

Preheat oven to 375 degree Fahrenheit.

Prepare a baking pan by greasing a little butter on the pan.

Transfer the prepared fruit filling to the prepared baking pan. Try to place the peaches and strawberries evenly distributed in the pan.

Pour the batter carefully over the fruits. Gently mix in the batter using a spoon so the batter is spread evenly.

Also use the spoon to bring out some slices of peaches and strawberries to the top so they are visible on top!

Place the baking pan in the preheated oven with a baking sheet underneath because there is a chance the contents may drip a bit.

Bake for about 35 minutes or until the top crust is baked golden brown in color. It won't be cooked completely inside at this point.

So cover the cobbler with a foil and change the oven temperature to 350 degree Fahrenheit and cook for another 20 minutes or until the cobbler is cooked completely.

Once done, allow the cobbler to cool down a bit, then scoop out the warm delicious cobbler and serve with ice cream.

For best results, make sure to serve the cobbler while its still warm along with cold vanilla ice cream!

You can refrigerate any leftovers and serve the chilled cobbler with ice cream as needed.
